Plot location: Las Hoyas de Río Záncara (El Provencio, Cuenca). A single plot (0.9 Ha). 35 years old.

It is worked in a traditional viticulture, completely organic. No single treatments in the vineyard since 2014 vintage nor any type of chemical and non-chemical products have been applied in the vineyard.
All vineyard work, Winter pruning, Green pruning and Green harvest, monitoring of ripening process are only carried out by Manuel and Paloma.
Grapes harvested at the optimum state of ripeness. Harvested early in the morning.
Vinification with complete grapes, with no previous pressing. 15% whole bunch including stalk.
Cold maceration for 4 days at 12ºC to extract the aromas.
Fermentation at 24ºC in stainless steel tanks with autochthonous yeast, for respecting and keeping the typicality of the raw material.
Spontaneous malolactic fermentation in once-used French oak barrels.
Aged for 14 months in once-used French oak barrels.
